Ingrédients

  • 2 cups quinoa
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 can black beans, drained and rinsed
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and 4 cups of water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a pan, heat olive oil over medium heat.
  5. Add onion and garlic. Sauté until soft.
  6. Add bell pepper and zucchini. Cook for 5 minutes.
  7. Stir in black beans, cumin, salt, and pepper. Cook for another 5 minutes.
  8. Fluff the quinoa with a fork and combine with the vegetable mixture.
  9. Serve hot, garnished with fresh cilantro.
