A delightful vegetarian dinner perfect for celebrating New Year’s.
Ingrédients

- 2 cups quinoa
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 can black beans, drained and rinsed
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and 4 cups of water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add onion and garlic. Sauté until soft.
- Add bell pepper and zucchini. Cook for 5 minutes.
- Stir in black beans, cumin, salt, and pepper. Cook for another 5 minutes.
- Fluff the quinoa with a fork and combine with the vegetable mixture.
- Serve hot, garnished with fresh cilantro.
Notes
- This dish can be served warm or at room temperature.
- Feel free to add your favorite vegetables.
