A delicious no-bake chocolate eclair icebox cake that is easy to prepare and perfect for any occasion.

- 2 packages of graham crackers
- 2 cups of heavy whipping cream
- 1 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 1 package of instant vanilla pudding mix
- 3 cups of milk
- 1 cup of chocolate syrup
Instructions
- In a mixing bowl, whip the heavy cream until soft peaks form.
- Add powdered sugar and vanilla extract, then continue to whip until stiff peaks form.
- In another bowl, combine the pudding mix and milk. Whisk until smooth and thick.
- Fold the whipped cream into the pudding mixture until combined.
- In a 9×13 inch dish, layer graham crackers at the bottom.
- Spread half of the pudding mixture over the crackers.
- Add another layer of graham crackers on top of the pudding.
- Spread the remaining pudding mixture over the second layer of crackers.
- Add a final layer of graham crackers.
- Drizzle chocolate syrup over the top layer.
- Refrigerate for at least 4 hours or overnight.
Notes
- Use any chocolate syrup of your choice.
- Allow the cake to sit overnight for best results.
- Top with whipped cream or chocolate shavings, if desired.
