No Bake Summer Berry Icebox Cake: 7 Refreshing Layers

Description

A refreshing no bake summer berry icebox cake that is easy to prepare and perfect for warm days.


Ingrédients

  • 2 cups of mixed berries (strawberries, blueberries, raspberries)
  • 1 package of graham crackers
  • 2 cups of heavy whipping cream
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract

Instructions

  1. In a mixing bowl, whip the heavy cream until soft peaks form.
  2. Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
  3. In a rectangular dish, layer graham crackers at the bottom.
  4. Spread a layer of whipped cream over the graham crackers.
  5. Add a layer of mixed berries on top of the whipped cream.
  6. Repeat the layers until you reach the top of the dish, finishing with whipped cream.
  7. Cover and refrigerate for at least 4 hours or overnight.
  8. Slice and serve chilled.

Notes

  • Use any combination of berries you prefer.
  • For a sweeter cake, adjust the amount of powdered sugar.
  • Make sure to refrigerate long enough for the cake to set.
