Description
A refreshing no bake summer berry icebox cake that is easy to prepare and perfect for warm days.
Ingrédients

- 2 cups of mixed berries (strawberries, blueberries, raspberries)
- 1 package of graham crackers
- 2 cups of heavy whipping cream
- 1 cup of powdered sugar
- 1 teaspoon of vanilla extract
Instructions
- In a mixing bowl, whip the heavy cream until soft peaks form.
- Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
- In a rectangular dish, layer graham crackers at the bottom.
- Spread a layer of whipped cream over the graham crackers.
- Add a layer of mixed berries on top of the whipped cream.
- Repeat the layers until you reach the top of the dish, finishing with whipped cream.
- Cover and refrigerate for at least 4 hours or overnight.
- Slice and serve chilled.
Notes
- Use any combination of berries you prefer.
- For a sweeter cake, adjust the amount of powdered sugar.
- Make sure to refrigerate long enough for the cake to set.
