- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 can black beans, drained
- 1 cup corn
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheese
Instructions
- In a skillet, brown the ground beef and onion over medium heat.
- Add garlic and cook for 1 minute.
- Stir in diced tomatoes, black beans, corn, cumin, chili powder, salt, and pepper.
- Simmer for 10 minutes.
- Top with shredded cheese and cover until melted.
Notes
- Serve with rice or tortillas.
- Can be made vegetarian by using lentils instead of beef.
