- 1 whole chicken, about 4 pounds
- 2 cups quinoa
- 1 cup cranberries, dried
- 1 bunch kale, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon thyme
- 2 cups vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken with salt, pepper, and thyme.
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add quinoa and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in kale and cranberries, cook for another 5 minutes.
- Place the chicken in a roasting pan and surround it with the quinoa mixture.
- Roast in the oven for 1 hour, or until the chicken reaches an internal temperature of 165°F (74°C).
