Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rub the chicken with olive oil, salt, pepper, and minced garlic.
  3. Stuff the cavity with lemon quarters and fresh herbs.
  4. Place the chicken in a roasting pan.
  5. Add chopped vegetables around the chicken.
  6. Roast for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let it rest for 10 minutes before carving.
