- 2 lbs beef tenderloin
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 cup red wine
- 2 cups mixed vegetables (carrots, green beans, potatoes)
- 1 tbsp butter
Instructions
- Preheat the oven to 425°F (220°C).
- Rub the beef tenderloin with olive oil, garlic, salt, pepper, rosemary, and thyme.
- Heat a skillet over high heat and sear the beef on all sides.
- Transfer the beef to a roasting pan and pour the red wine around it.
- Roast in the oven for 25-30 minutes or until the desired doneness.
- Meanwhile, steam the mixed vegetables until tender.
- Let the beef rest for 10 minutes before slicing.
- Serve the sliced beef with vegetables and pan sauce.
