  • 2 lbs beef tenderloin
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 cup red wine
  • 2 cups mixed vegetables (carrots, green beans, potatoes)
  • 1 tbsp butter

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rub the beef tenderloin with olive oil, garlic, salt, pepper, rosemary, and thyme.
  3. Heat a skillet over high heat and sear the beef on all sides.
  4. Transfer the beef to a roasting pan and pour the red wine around it.
  5. Roast in the oven for 25-30 minutes or until the desired doneness.
  6. Meanwhile, steam the mixed vegetables until tender.
  7. Let the beef rest for 10 minutes before slicing.
  8. Serve the sliced beef with vegetables and pan sauce.
