  • 1 tablespoon butter
  • 1 cup red wine

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the beef tenderloin with olive oil, salt, and black pepper.
  3. Sear the beef in a hot skillet for 3-4 minutes on each side.
  4. Transfer the beef to the oven and roast for 25-30 minutes.
  5. In the same skillet, add garlic and sauté for 1 minute.
  6. Add asparagus and potatoes, season with salt, pepper, and rosemary. Cook for 10 minutes.
  7. Remove the beef from the oven and let it rest for 10 minutes.
  8. Deglaze the skillet with red wine, scraping up any bits. Cook for 5 minutes.
  9. Slice the beef and serve with asparagus and potatoes, drizzled with red wine sauce.
