Ingrédients

- 2 lbs beef tenderloin
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 cups asparagus, trimmed
- 2 cups baby potatoes, halved
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon butter
- 1 cup red wine
Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef tenderloin with olive oil, salt, and black pepper.
- Sear the beef in a hot skillet for 3-4 minutes on each side.
- Transfer the beef to the oven and roast for 25-30 minutes.
- In the same skillet, add garlic and sauté for 1 minute.
- Add asparagus and potatoes, season with salt, pepper, and rosemary. Cook for 10 minutes.
- Remove the beef from the oven and let it rest for 10 minutes.
- Deglaze the skillet with red wine, scraping up any bits. Cook for 5 minutes.
- Slice the beef and serve with asparagus and potatoes, drizzled with red wine sauce.
