- 2 medium zucchinis, sliced

Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
- Place the salmon fillets and zucchini on a baking sheet.
- Pour the lemon herb mixture over the salmon and zucchini.
- Bake for 15-20 minutes until the salmon is cooked through.
- Serve hot and enjoy your meal.
