A simple and flavorful one pot dish featuring lemon herb chicken and rice.
Ingrédients

- 4 chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1 lemon (juiced and zested)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Season chicken thighs with salt, pepper, garlic powder, and onion powder.
- Brown chicken on both sides for about 5-7 minutes.
- Add rice, chicken broth, lemon juice, lemon zest, and thyme to the pot.
- Bring to a boil, then reduce heat to low and cover.
- Cook for 20-25 minutes until rice is tender and chicken is cooked through.
- Remove from heat and let it sit for 5 minutes before serving.
- Garnish with fresh parsley.
Notes
- Adjust seasoning to your taste.
- You can use chicken breast instead of thighs.
- Serve with a side of steamed vegetables for a complete meal.
