Description
A simple and flavorful one pot Mexican rice casserole that combines rice, beans, and spices.
Ingrédients

- 1 cup long-grain rice
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn kernels
- 1 cup vegetable broth
- 1 cup shredded cheese
- 1 tablespoon taco seasoning
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 1 bell pepper, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and bell pepper, sauté until soft.
- Stir in rice and taco seasoning, cook for 2 minutes.
- Add black beans, diced tomatoes, corn, and vegetable broth.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes or until rice is cooked.
- Stir in cheese until melted.
- Serve hot.
Notes
- Adjust seasoning to taste.
- Can add jalapeños for heat.
- Garnish with cilantro if desired.
