Ingrédients

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn kernels
  • 1 cup vegetable broth
  • 1 cup shredded cheese
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1 bell pepper, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and bell pepper, sauté until soft.
  3. Stir in rice and taco seasoning, cook for 2 minutes.
  4. Add black beans, diced tomatoes, corn, and vegetable broth.
