- 2 cups fresh spinach
- 1 can artichoke hearts, drained and chopped
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, sauté garlic until fragrant.
- Add pasta, vegetable broth, and heavy cream.
- Bring to a boil and then reduce heat. Cook until pasta is al dente.
- Stir in spinach and artichokes.
- Add Parmesan cheese and mix until creamy.
- Season with salt and pepper.
- Serve warm.
Notes
- For a lighter version, use half and half instead of heavy cream.
- You can add grilled chicken for extra protein.
