Pan seared cod served with a white wine tomato basil sauce.


Ingrédients

  • 4 cod fillets
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season cod fillets with salt and pepper.
  3. Add cod to the skillet and sear for 3-4 minutes on each side until golden brown.
  4. Remove cod from the skillet and set aside.
  5. Add garlic and cherry tomatoes to the skillet; sauté for 2 minutes.
  6. Pour in the white wine and bring to a simmer.
  7. Stir in chopped basil and return the cod to the skillet.
  8. Cook for an additional 2-3 minutes until cod is cooked through.

Notes

  • Serve with crusty bread for soaking up the sauce.
  • Use fresh basil for best flavor.
