A hearty and creamy potato soup made in a crockpot, perfect for a comforting meal.
Ingrédients

- 6 medium potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup bacon bits
- Salt and pepper to taste
Instructions
- Place diced potatoes and chopped onion in the crockpot.
- Add chicken broth and cook on low for 6-8 hours or high for 3-4 hours.
- Once potatoes are tender, mash some of them to thicken the soup.
- Stir in heavy cream and cheese, and let it heat through.
- Add bacon bits and season with salt and pepper before serving.
Notes
- This soup can be topped with green onions or additional cheese.
- Store leftovers in the refrigerator for up to 3 days.
- Can be frozen for up to 2 months.
