Description
A quick and tasty peanut noodle stir fry with fresh vegetables.
Ingrédients

- 8 oz rice noodles
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 1 cup carrots, julienned
- 1/2 cup green onions, chopped
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 2 tbsp honey
- 1 tbsp lime juice
- 1 clove garlic, minced
- 1 tsp ginger, grated
Instructions
- Cook the rice noodles according to package instructions.
- In a large pan, heat sesame oil over medium heat.
- Add garlic and ginger; sauté for 1 minute.
- Add bell peppers, broccoli, and carrots; stir fry for 5 minutes.
- In a bowl, mix peanut butter, soy sauce, honey, and lime juice.
- Drain noodles and add to the pan with vegetables.
- Pour the peanut sauce over the noodles and mix well.
- Stir in green onions and cook for another 2 minutes.
- Serve hot and enjoy.
Notes
- Adjust the thickness of the sauce by adding more soy sauce or water.
- You can add protein like chicken or tofu for extra nutrition.
- This dish is best served immediately.
