A delicious pecan upside down bundt cake that combines the rich flavor of pecans with a moist cake.


Ingrédients

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 2 cups pecans, chopped
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter and brown sugar together in a saucepan.
  3. Pour mixture into the bundt pan and sprinkle pecans over it.
  4. In a bowl, mix flour, baking powder, baking soda, and salt.
  5. In another bowl, beat sugars and eggs until fluffy.
  6. Add vanilla and mix well.
  7. Alternate adding flour mixture and buttermilk to the egg mixture.
  8. Pour batter into the bundt pan over the pecans.
  9. Bake for 60 minutes or until a toothpick comes out clean.
  10. Let cool for 10 minutes, then invert onto a serving plate.

Notes

  • Store leftovers in an airtight container.
  • Can be served with whipped cream.
  • Substitute walnuts for pecans if desired.
