Description
A delicious pecan upside down bundt cake that combines the rich flavor of pecans with a moist cake.

- 1 cup unsalted butter
- 1 cup brown sugar
- 2 cups pecans, chopped
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
Instructions
- Preheat oven to 350°F (175°C).
- Melt butter and brown sugar together in a saucepan.
- Pour mixture into the bundt pan and sprinkle pecans over it.
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, beat sugars and eggs until fluffy.
- Add vanilla and mix well.
- Alternate adding flour mixture and buttermilk to the egg mixture.
- Pour batter into the bundt pan over the pecans.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes, then invert onto a serving plate.
Notes
- Store leftovers in an airtight container.
- Can be served with whipped cream.
- Substitute walnuts for pecans if desired.
