Description
A classic French onion soup with rich flavor and a cheesy topping.
Ingrédients

- 4 large onions, thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 8 cups beef broth
- 1 cup dry white wine
- 2 sprigs fresh thyme
- 1 bay leaf
- 1 baguette, sliced
- 2 cups grated Gruyere cheese
Instructions
- In a large pot, melt butter and olive oil over medium heat.
- Add onions, salt, and sugar. Cook until onions are caramelized.
- Stir in garlic and cook for 1 minute.
- Add beef broth, wine, thyme, and bay leaf. Simmer for 30 minutes.
- Preheat oven to broil.
- Remove thyme and bay leaf. Ladle soup into oven-safe bowls.
- Top with baguette slices and cheese.
- Broil until cheese is bubbly and golden.
Notes
- Use low-sodium broth for better control of saltiness.
- Allow soup to cool before storing in the fridge.
- Reheat gently on the stove before serving.
