Description
A flavorful Peruvian chicken dish served with rice and a spicy green sauce.
Ingrédients

- 4 chicken thighs
- 2 cups of rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 green pepper, chopped
- 1 cup chicken broth
- 1/2 cup cilantro
- 1 jalapeño, seeded
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until soft.
- Add chicken thighs, cook until browned.
- Stir in rice and green pepper.
- Add chicken broth, bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- In a blender, combine cilantro, jalapeño, lime juice, salt, and pepper. Blend until smooth.
- Serve chicken and rice with green sauce on top.
Notes
- Adjust spice level by using more or less jalapeño.
- Can substitute chicken thighs with breasts.
- Serve with lime wedges for extra flavor.
