Description

A flavorful Peruvian chicken dish served with rice and a spicy green sauce.


Ingrédients

  • 4 chicken thighs
  • 2 cups of rice
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 green pepper, chopped
  • 1 cup chicken broth
  • 1/2 cup cilantro
  • 1 jalapeño, seeded
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add chicken thighs, cook until browned.
  4. Stir in rice and green pepper.
  5. Add chicken broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. In a blender, combine cilantro, jalapeño, lime juice, salt, and pepper. Blend until smooth.
  8. Serve chicken and rice with green sauce on top.

Notes

  • Adjust spice level by using more or less jalapeño.
  • Can substitute chicken thighs with breasts.
  • Serve with lime wedges for extra flavor.
