A creamy pistachio cheesecake with a nutty crust.
Ingrédients

- 1 ½ cups pistachio nuts, shelled
- 1 cup graham cracker crumbs
- ½ cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
- ½ cup powdered sugar
- ¼ cup pistachio paste
Instructions
- Preheat oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs and melted butter.
- Press mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and sour cream.
- Mix in pistachio paste until fully combined.
- Pour mixture over the crust in the springform pan.
- Bake for 55-60 minutes, until set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- Use fresh pistachios for best flavor.
- Let the cheesecake cool completely before refrigerating.
- Top with whipped cream or additional pistachios if desired.
