  • 1 cup graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • ½ cup powdered sugar
  • ¼ cup pistachio paste

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs and melted butter.
  3. Press mixture into the bottom of a springform pan.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract and sour cream.
  7. Mix in pistachio paste until fully combined.
  8. Pour mixture over the crust in the springform pan.
  9. Bake for 55-60 minutes, until set.
  10. Allow to cool, then refrigerate for at least 4 hours before serving.

  • Let the cheesecake cool completely before refrigerating.
  • Top with whipped cream or additional pistachios if desired.
