Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a large bowl, combine quinoa, black beans, corn, bell pepper, and avocado.
- Add cilantro and lime juice.
- Season with salt and pepper.
- Toss gently to combine.
- Serve chilled or at room temperature.

- Feel free to add other vegetables.
- This dish can be made a day in advance.
