- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped

Instructions
- Preheat your oven to 450°F (232°C).
- Rub the roast with olive oil, salt, and pepper.
- Mix garlic, rosemary, and thyme, then rub onto the roast.
- Place the roast bone-side down in a roasting pan.
- Roast for 20 minutes, then reduce temperature to 325°F (163°C).
- Continue roasting until desired doneness, about 1.5 to 2 hours.
- Let the roast rest for 20 minutes before slicing.
