Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Place the roast in a roasting pan, bone side down.
  4. Roast for 20 minutes, then reduce the temperature to 325°F (163°C).
  5. Continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare.
  6. Remove from the oven and let it rest for 20 minutes before slicing.
