- 1 rib roast (5–7 pounds)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons rosemary, chopped
- 2 tablespoons thyme, chopped
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 450°F (232°C).
- Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the roast in a roasting pan, bone side down.
- Roast for 20 minutes, then reduce the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from the oven and let it rest for 20 minutes before slicing.
Notes
- For more flavor, marinate the roast overnight.
- Use a meat thermometer for accuracy.
- Adjust cooking time based on the size of the roast.
