  • 1/2 teaspoon ginger
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese
  • 1/4 cup butter
  • 2 cups powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, combine pumpkin puree, oil, eggs, and vanilla.
  4. Mix wet ingredients into dry ingredients until just combined.
  5. Pour batter into a greased loaf pan.
  6. Bake for 60-70 minutes or until a toothpick comes out clean.
  7. Let cool before frosting.
  8. For frosting, beat cream cheese and butter until smooth.
  9. Add powdered sugar and milk, mixing until creamy.
  10. Spread frosting over cooled pumpkin bread.
