- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon

- 1/2 teaspoon ginger
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 8 oz cream cheese
- 1/4 cup butter
- 2 cups powdered sugar
- 1 tablespoon milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In another bowl, combine pumpkin puree, oil, eggs, and vanilla.
- Mix wet ingredients into dry ingredients until just combined.
- Pour batter into a greased loaf pan.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Let cool before frosting.
- For frosting, beat cream cheese and butter until smooth.
- Add powdered sugar and milk, mixing until creamy.
- Spread frosting over cooled pumpkin bread.

- Can be frozen for up to 3 months.
