  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine pumpkin puree, sugar, oil, eggs, and vanilla.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. In a separate bowl, beat cream cheese and maple syrup until smooth.
  6. Pour half of the pumpkin batter into a greased loaf pan.
  7. Spread the cream cheese mixture on top of the batter.
  8. Pour the remaining pumpkin batter over the cream cheese filling.
  9. Bake for 60-70 minutes, or until a toothpick comes out clean.
  10. Let cool before slicing.
