A delicious pumpkin pecan bread pudding, perfect for fall.

- 4 cups cubed bread
- 2 cups pumpkin puree
- 1 cup milk
- 1 cup heavy cream
- 3/4 cup brown sugar
- 1/2 cup chopped pecans
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, milk, cream, brown sugar, eggs, vanilla, cinnamon, nutmeg, and salt.
- Add cubed bread and pecans to the mixture. Stir to combine.
- Pour the mixture into a greased baking dish.
- Bake for 45-50 minutes or until set.
- Let cool before serving.
Notes
- Serve warm with whipped cream.
- Store leftovers in the refrigerator.
