  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, sugar, brown sugar, and oil.
  3. Add eggs and mix until smooth.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in white chocolate chips.
  7. Pour batter into muffin cups, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let muffins cool before serving.
