Description
A hearty and nutritious quinoa and black bean chili packed with flavor.
Ingrédients

- 1 cup quinoa
- 2 cans black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, sauté onion and garlic until soft.
- Add bell pepper and cook for another 2 minutes.
- Stir in quinoa, black beans, tomatoes, broth, chili powder, and cumin.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Season with salt and pepper.
- Serve hot.

- Adjust spices to your taste.
- Top with avocado or cilantro if desired.
- Store leftovers in the fridge for up to 4 days.
