Delicious raspberry crumble cookies with a buttery crumb topping.
Ingrédients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh raspberries
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream the butter and granulated sugar together.
- Add flour, baking powder, and salt. Mix until combined.
- Gently fold in raspberries.
- In another bowl, combine oats, brown sugar, and cinnamon.
- Press half of the cookie dough into the bottom of a baking dish.
- Spread the raspberry mixture over the pressed dough.
- Crumble the remaining dough over the raspberries.
- Bake for 25-30 minutes until golden brown.
- Cool before cutting into squares.
Notes
- Use fresh raspberries for best flavor.
- Store in an airtight container.
