Description

Deliciously moist red velvet muffins with a hint of cocoa and cream cheese.


Ingrédients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon cocoa powder
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • ½ cup cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners.
  3. In a bowl, mix flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  4. In another bowl, whisk together oil, buttermilk, eggs, food coloring, and vanilla extract.
  5. Combine wet and dry ingredients until just mixed.
  6. Fill muffin cups ¾ full with batter.
  7. Drop a small spoonful of cream cheese in the center of each muffin.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Allow to cool before serving.

Notes

  • Store muffins in an airtight container.
  • Can substitute buttermilk with regular milk.
  • Optional: sprinkle with powdered sugar before serving.
