Description

Red velvet whoopie pies are soft, cake-like cookies filled with cream cheese frosting.

  • 1 teaspoon salt

  • 1 cup buttermilk

  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, combine oil, buttermilk, eggs, food coloring, and vanilla.
  4. Combine the wet and dry ingredients.
  5. Drop tablespoons of batter onto a baking sheet.
  6. Bake for 10-12 minutes until set.
  7. Let cookies cool completely.
  8. In a bowl, beat cream cheese and butter until smooth.
  9. Add powdered sugar and vanilla, mix until creamy.
  10. Spread filling on the flat side of one cookie and top with another cookie.
