Red velvet whoopie pies are soft, cake-like cookies filled with cream cheese frosting.

- 2 cups powdered sugar

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, combine oil, buttermilk, eggs, food coloring, and vanilla.
- Combine the wet and dry ingredients.
- Drop tablespoons of batter onto a baking sheet.
- Bake for 10-12 minutes until set.
- Let cookies cool completely.
- In a bowl, beat cream cheese and butter until smooth.
- Add powdered sugar and vanilla, mix until creamy.
- Spread filling on the flat side of one cookie and top with another cookie.

- Store whoopie pies in an airtight container.
- They are best enjoyed within 2-3 days.
- You can add more food coloring for a deeper red color.
