A simple and delicious rhubarb butter recipe that you can spread on toast or use in desserts.
Ingrédients

- 4 cups rhubarb, chopped
- 2 cups sugar
- 1/2 cup water
- 1 tablespoon lemon juice
Instructions
- Combine rhubarb, sugar, water, and lemon juice in a saucepan.
- Cook over medium heat until the rhubarb breaks down, about 10-15 minutes.
- Puree the mixture using an immersion blender.
- Simmer the puree on low heat until thickened, about 30 minutes.
- Pour into sterilized jars and seal.
Notes
- Store in the refrigerator for up to two weeks.
- This can also be canned for long-term storage.
- Adjust sugar to taste if you prefer a less sweet spread.
