  • 1/4 cup granulated sugar
  • 1/2 cup butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup powdered sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups rhubarb, chopped
  • 1/2 cup granulated sugar (for rhubarb)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of a greased baking dish.
  4. In another bowl, beat cream cheese and powdered sugar until smooth.
  5. Add eggs and vanilla extract, mixing until combined.
  6. Pour the cream cheese mixture over the crust in the baking dish.
  7. In a separate bowl, combine rhubarb, sugar, and cornstarch.
  8. Spread the rhubarb mixture over the cheesecake layer.
  9. Bake for 35-40 minutes or until set.
  10. Allow to cool, then refrigerate for at least 2 hours before serving.
