Instructions
- Preheat your oven to 450°F (232°C).
- Pat the rib roast dry with paper towels.
- Rub the olive oil over the roast.
- Mix salt, pepper, garlic, rosemary, and thyme in a bowl.
- Massage the seasoning mix onto the roast.
- Place the roast on a rack in a roasting pan.
- Roast in the oven for 20 minutes.
- Lower the oven temperature to 325°F (163°C) and continue roasting for 1.5 to 2 hours.
- Check for doneness (130°F for medium-rare).
- Let the roast rest for 20 minutes before slicing.
