Description

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Combine olive oil, garlic, salt, pepper, rosemary, and thyme in a bowl.
  3. Rub the mixture all over the rib roast.
  4. Place the roast bone-side down in a roasting pan.
  5. Roast in the oven for 20 minutes.
  6. Reduce the temperature to 325°F (163°C) and continue cooking for 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  7. Remove from the oven and let it rest for 20 minutes before slicing.
