A classic rib roast recipe for a delicious and tender main dish.

- 1 rib roast (about 5–7 pounds)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- In a bowl, mix olive oil, garlic, salt, pepper, rosemary, and thyme.
- Rub the mixture all over the rib roast.
- Place the roast on a rack in a roasting pan.
- Roast for 20 minutes at 450°F, then reduce temperature to 325°F (163°C).
- Continue roasting for about 1.5 to 2 hours or until desired doneness.
- Remove from oven and let rest for 15-20 minutes before carving.

- Use a meat thermometer for precise cooking.
- Let the roast come to room temperature before cooking.
- Adjust cooking time based on the size of the roast.
