Instructions
- Preheat your oven to 450°F (230°C).
- In a bowl, mix olive oil, salt, pepper, garlic, rosemary, and thyme.
- Rub the mixture all over the rib roast.
- Place the roast in a roasting pan, bone side down.
- Roast for 20 minutes at 450°F (230°C).
- Reduce the temperature to 325°F (160°C) and continue roasting for 1.5 to 2 hours.
- Use a meat thermometer to check for doneness (135°F for medium-rare).
- Let the roast rest for 15-20 minutes before slicing.

- Adjust cooking time based on desired doneness.
- For a crustier exterior, sear the roast in a hot pan before roasting.
