Instructions

  2. In a bowl, mix garlic, olive oil, salt, pepper, rosemary, and thyme.
  3. Rub the mixture all over the rib roast.

  5. Roast for 20 minutes at 450°F.
  6. Reduce the temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare.
  7. Remove from the oven and let it rest for 15-20 minutes before slicing.
