Instructions
- Preheat your oven to 450°F (232°C).
- Rub the ribeye roast with olive oil, salt, and pepper.
- Spread minced garlic, rosemary, and thyme over the roast.
- Place the roast on a rack in a roasting pan.
- Roast in the preheated oven for 15 minutes.
- Reduce oven temperature to 325°F (163°C) and continue roasting for 1.5 to 2 hours until internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from oven and let the roast rest for 15-20 minutes before slicing.
