Instructions
- Preheat the oven to 400°F (200°C).
- Cut the pumpkin into cubes and toss with olive oil, salt, and pepper.
- Spread the pumpkin on a baking sheet and roast for 25-30 minutes until tender.
- In a large bowl, combine mixed greens, roasted pumpkin, feta cheese, walnuts, and cranberries.
