- 4 chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix roasted red peppers, spinach, and mozzarella.
- Cut a pocket in each chicken breast and stuff with the mixture.
- Drizzle olive oil over the chicken and season with garlic powder, Italian seasoning, salt, and pepper.
- Place chicken in a baking dish and cover with foil.
- Bake for 25-30 minutes, then remove foil and bake for another 10 minutes.
- Check internal temperature; it should reach 165°F (75°C).
- Let rest for 5 minutes before serving.
