  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix roasted red peppers, spinach, and mozzarella.
  3. Cut a pocket in each chicken breast and stuff with the mixture.
  4. Drizzle olive oil over the chicken and season with garlic powder, Italian seasoning, salt, and pepper.
  5. Place chicken in a baking dish and cover with foil.
  6. Bake for 25-30 minutes, then remove foil and bake for another 10 minutes.
  7. Check internal temperature; it should reach 165°F (75°C).
  8. Let rest for 5 minutes before serving.
