Description
A refreshing ice cream made with roasted strawberries, lime, and basil.
Ingrédients

- 2 cups strawberries, hulled and halved
- 1 tablespoon sugar
- 1 tablespoon olive oil
- 1 lime, juiced and zested
- 1 cup heavy cream
- 1 cup whole milk
- 1/2 cup sugar
- 1/4 cup fresh basil, chopped
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss strawberries with 1 tablespoon sugar and olive oil.
- Spread strawberries on a baking sheet and roast for 20 minutes.
- Remove from oven and let cool.
- In a separate bowl, whisk together cream, milk, 1/2 cup sugar, lime juice, lime zest, basil, and vanilla.
- Add the cooled roasted strawberries to the mixture.
- Chill the mixture in the refrigerator for 2 hours.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer ice cream to a container and freeze for at least 4 hours before serving.
Notes
- Use ripe strawberries for best flavor.
- Adjust sugar based on the sweetness of the strawberries.
- Can substitute basil with mint for a different flavor.
