Description
A healthy and filling salad with roasted sweet potatoes and black beans.
Ingrédients

- 2 medium sweet potatoes, cubed
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups fresh spinach
- Juice of 1 lime
Instructions
- Preheat oven to 425°F (220°C).
- Toss sweet potatoes with olive oil, cumin, salt, and pepper.
- Spread sweet potatoes on a baking sheet.
- Roast for 25-30 minutes until tender.
- In a large bowl, combine roasted sweet potatoes, black beans, red bell pepper, onion, and spinach.
- Drizzle with lime juice and mix well.
- Serve immediately or chill before serving.
Notes
- Can add avocado for extra creaminess.
- Use fresh herbs for added flavor.
- This salad can be stored in the refrigerator for up to 3 days.
