Description

A healthy and delicious bowl featuring roasted veggies and chickpeas topped with a maple dijon tahini dressing.


Ingrédients

  • 2 cups mixed vegetables (bell peppers, zucchini, carrots)
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons tahini
  • 1 tablespoon maple syrup
  • 1 tablespoon dijon mustard
  • 2 tablespoons water

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Chop the vegetables into bite-sized pieces.
  3. In a bowl, mix the vegetables and chickpeas with olive oil, garlic powder, salt, and pepper.
  4. Spread the mixture on a baking sheet.
  5. Roast for 25-30 minutes, stirring halfway through.
  6. In a small bowl, whisk together tahini, maple syrup, dijon mustard, and water.
  7. Assemble the bowl with roasted veggies and chickpeas.
  8. Drizzle with the maple dijon tahini dressing.
