Description
A healthy and delicious bowl featuring roasted veggies and chickpeas topped with a maple dijon tahini dressing.
Ingrédients

- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 1 can (15 oz) chickpeas, rinsed and drained
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons tahini
- 1 tablespoon maple syrup
- 1 tablespoon dijon mustard
- 2 tablespoons water
Instructions
- Preheat oven to 400°F (200°C).
- Chop the vegetables into bite-sized pieces.
- In a bowl, mix the vegetables and chickpeas with olive oil, garlic powder, salt, and pepper.
- Spread the mixture on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through.
- In a small bowl, whisk together tahini, maple syrup, dijon mustard, and water.
- Assemble the bowl with roasted veggies and chickpeas.
- Drizzle with the maple dijon tahini dressing.

- Feel free to use any seasonal vegetables.
