- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cooked quinoa
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss chickpeas and vegetables with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the mixture on a baking sheet.
- Roast for 20-25 minutes until vegetables are tender.
- Serve roasted veggies and chickpeas over cooked quinoa.
- Garnish with fresh parsley.
