Description

- 2 pounds beef stew meat
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons olive oil
- 1 tablespoon Worcestershire sauce

- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over the campfire.
- Add beef and brown on all sides.
- Add onion and garlic, cooking until softened.
- Stir in potatoes, beef broth, Worcestershire sauce, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for about 1.5 hours until beef is tender.
- Remove bay leaf before serving.
