Description
A hearty rustic chicken potato stew with carrots and herbs.
Ingrédients

- 1 pound chicken thighs, boneless and skinless
- 4 medium potatoes, diced
- 2 large carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic. Sauté until soft.
- Add chicken thighs. Cook until browned on all sides.
- Add potatoes, carrots, thyme, rosemary, salt, and pepper.
- Pour in chicken broth. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Check seasoning and adjust if needed.
- Serve hot.
Notes
- Use fresh herbs for more flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This stew freezes well.
