- 2 large eggs
- 1 1/2 cups milk

- 1 cup cooked chicken, shredded

- Salt and pepper to taste
Instructions
- In a bowl, mix flour, eggs, milk, and melted butter until smooth.
- Heat a non-stick skillet over medium heat and pour in a ladle of batter, swirling to form a thin layer.
- Cook until edges lift, then flip and cook the other side briefly.
- Remove crepe and repeat with remaining batter.
- In a pan, sauté mushrooms until soft, then add spinach and cook until wilted.
- Add shredded chicken to the pan and season with salt and pepper.
- Place a portion of the chicken mixture on each crepe and sprinkle with cheese if desired.
- Roll or fold the crepes and serve warm.
