- 1 cup cooked chicken, shredded
- 1 cup spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup milk
- 1 cup flour
- 2 eggs
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a bowl, mix flour, milk, and eggs to make the crepe batter.
- Heat a non-stick skillet and add a little butter.
- Pour a small amount of batter into the skillet, tilting to spread evenly.
- Cook until edges lift, then flip and cook for another minute.
- Remove the crepe and repeat with remaining batter.
- In another pan, sauté mushrooms and spinach until tender.
- Add shredded chicken and season with salt and pepper.
- Place filling in the center of each crepe and fold.
- Serve warm.

- You can substitute chicken with tofu for a vegetarian option.
