- 1 cup quinoa
- 2 cups water
- 1 can black beans, rinsed
- 1 cup corn
- 1 bell pepper, diced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Combine quinoa and water in a pot.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine quinoa, black beans, corn, bell pepper, avocado, and cilantro.
- Add lime juice, salt, and pepper. Stir to combine.
- Serve chilled or at room temperature.

- Can be prepared a day in advance.
- Great for potlucks and picnics.
