Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
- Coat the chicken thighs with the mixture.
- Place the chicken and halved baby potatoes on a sheet pan.
- Drizzle remaining oil mixture over potatoes.
- Bake for 35-40 minutes or until chicken is cooked through.
- Garnish with fresh parsley before serving.
